If you clipped my wings and forced me to live in one region, I would swoop over to the Mediterranean before you got the clippers out. Being surrounded by the beautiful scenery, rich culture, and temperate climate would be heavenly. If that’s not enough, they have, in this humble blogger’s opinion, the best food ever. Rich, tangy, spiced, flavorful, and if you know your way around the ingredients, you can make divine food without much fat, keeping you lean and beach ready all year around. Enter this wonderful dish that has the consistency of a good stew and a lot of the nutrients for a well balanced meal. Soy, what tofu is made of, is a high quality vegetarian complete protein, meaning it as all essential amino acids, and mushrooms, cremini in this case, are packed with lots of minerals like  Zinc, Copper, Manganese and Selenium. Enjoy this over risotto, bread or quinoa or even more protein.
