Saagara’s Spinach Salad

As part of Saagara’s Spicy Muse Project, we want to celebrate Stress Awareness Month by helping you conquer your stress. We will be posting one stress-relieving recipe a day we have collected from various sources that have inspired us. Enjoy!

Saagara Saladteers (think ‘pioneer’) have put together a mix of their most favorite salad recipes to create one simple and nutritious meal! Since it’s salad, there really aren’t any strict measurements as it depends on your own preferences.  I’ve suggested some proportions, but feel free to abandon them. Spinach, as you might know, is mighty and provides the ABCs for a healthy diet. It is full of vitamin A, B6, and C!

Ingredients for salad:

  • 5 cups of organic spinach
  • 1/3 cup of dried cranberries
  • ½ cup of sliced red onions

Other options to add:

  • ¼ cup of cut up pear splices
  • 1 oz. of smoked salmon cut into strips
  • Toasted walnuts or soy nuts or almonds

Ingredients for dressing:

 

  • ¼ cup of olive oil
  • 1 tablespoon of balsamic vinegar
  • Salt and pepper
  • 1 teaspoon of whole grain mustard

To make the dressing, simply put all ingredients in a sealable glass container and shake it up.

To make the salad, mix all dry ingredients together. Et voila! Delicious, healthy, and filling!
